Easy Vegan Pesto in 5 minutes (quick recipe!)

I finally did it! I made the perfect pesto recipe using just 7 simple ingredients! Not only does it taste delicious, but it also refrigerates well without losing that beautiful green color.

Why I love Easy Vegan pesto?

Easy Vegan Pesto can be slightly difficult to perfect. You have to provide a balance of savory, acidic, sweet, and salty flavors. Once you have the right recipe easy vegan pesto, you can create a plethora of yummy recipes!

Ingredients for Easy Vegan Pesto:

  • 2 cups fresh basil leaves (packed)
  • 1/2 cup raw cashews or pine nuts
  • 3 cloves garlic (minced)
  • 1/2 cup nutritional yeast
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1/4 teaspoon sea salt (or to taste)
  • 2-4 tablespoons water (as needed for desired consistency)

Instructions to Make Easy Vegan Pesto:

  1. Prepare Ingredients:
    Wash and pat dry the fresh basil leaves. Mince the garlic for a more even blend.
  2. Blend Dry Ingredients:
    In a food processor or blender, combine the basil leaves, raw cashews or pine nuts, garlic, nutritional yeast, and sea salt. Pulse until the mixture becomes a coarse paste.
  3. Add Wet Ingredients:
    Slowly drizzle in the olive oil while the food processor is running. Add lemon juice to brighten the flavors.
  4. Adjust Consistency:
    Add 2-4 tablespoons of water, one tablespoon at a time, to reach your desired pesto consistency. Blend until smooth.
  5. Taste and Adjust:
    Taste the pesto and adjust the seasoning with more salt or lemon juice if needed.
  6. Store and Serve:
    Transfer your easy vegan pesto to an airtight container and refrigerate. It stays vibrant and fresh for up to a week. Use it as a sauce, dip, or spread for a variety of dishes!
